NIGERIAN GIZDODO RECIPE

Hey fam,

As promised, I would be doing more food blogging.

Today's post is a recipe I saw on YouTube some days ago.
It is gizdodo; it is a combination of gizzard, fried plantain which is called 'dodo' in Nigeria and peppered sauce.

Here we go!

You will need; Gizzard, plantain, tomatoes, pepper, onions, white pepper, yellow pepper, All spice, Cooking oil( I used regular vegetable oil and flavoured olive oil), curry powder, thyme, seasoning cubes, vinaigrette(optional), salt to taste.



Wash and boil the gizzard; season with salt, curry, all spice, onions and thyme.


Let it boil for about 20 minutes.
Transfer to a seperate bowl with a little of its broth.


Wash the tomatoes, pepper balls and onions; blend to a rough paste.
This would be used for the peppered starter sauce.


To prepare the sauce, put about two teaspoons of the flavoured olive oil, you can use any type of cooking oil you desire.


DO NOT HEAT THE OIL, POUR IN THE BLENDED PASTE IMMEDIATELY. DO NOT STIR.
This is to prevent it from sticking to the pot/pan.


Add a pinch of salt.


Reduce heat completely and leave to cook for an hour.
The salt helps to preserve the sauce in the refrigerator for as long as possible.

Chop/dice the plantains(I washed mine but you could skip that).


Chop the boiled gizzard.


Deep fry these chopped ingredients and place into a bowl with some kitchen paper towels, to help absorb excess oil.





Check the boiling peppered sauce after an hour and stir, I left mine for another 20 minutes on the burner to thicken up.


See that the sauce did not stick to the pot :)

Heat up some vegetable oil in another pot or wok and sauté some chopped onions.


Add the sauce.


Add the spice-all spice, yellow pepper, white pepper, curry, thyme, vinaigrette, seasoning cube and salt. Be careful with the seasoning/salt because the broth/stock contains salt already.


Pour in the broth.


Stir and let simmer for 10 minutes.

Add the fried plantain(dodo) and fried gizzard.


Stir properly, add a little water.


Let it simmer for 3 minutes and serve!!

Yummy.
